We invite you to join William Moore, The Spectator’s features editor and co-host of The Edition podcast, and José Souto, the award-winning chef, for an evening exploring the art of traditional feathered game butchery, with tastings and wine pairings.You'll enjoy an introduction from field to fork into the different game birds found in the UK, covering everything from seasons, history and cooking, followed by a butchery demo and a taste test.   

Westminster Kingsway College, Vincent Square, London| 6 - 9pm| £225 per person  

Your ticket includes a glass of fine English fizz on arrival, a 90-minute live butchery demonstration and a talk by José Souto, followed by a guided tasting of different cuts with wine pairings. There is also the opportunity to purchase a signed copy of José's books at an additional £30 each. 

José Souto

A London chef, lecturer and game specialist, José is senior chef lecturer in culinary arts at Westminster Kingsway College, where he trained himself. Born in Britain to Spanish parents, he spent childhood holidays hunting and fishing with one side of the family in Andalucia and learning about produce from the farming side in Galicia. He cooked at the House of Commons for more than 11 years, with sabbaticals at Mosimann’s, The Ritz, the Savoy Grill and the Intercontinental Park Lane, and it was a game training manual he wrote there that took him back to the college to lecture. He is the author of Venison: The Game Larder and Feathers: The Game Larder, both photographed by Steve Lee, runs game seminars for chefs and the public, and is a keen stalker and falconer.
