One of the great joys of living on these islands is the delicious native seafood we have available. A scandal, then, that we export some 80 per cent of our produce and import frozen prawns from Thailand. Food writer Mike Warner, UK Fisheries Ambassador for Wright Bros, will explain how best we can redress this bizarre balance as he demonstrates how to pick the perfect crab and shucks some fine native oysters for us to taste alongside langoustines.
